I couldn’t find a pasta that fed both the body and the brain.
So l built one.

I didn’t set out to make a pasta.
I was supposed to be writing a cookbook—
A love letter to the woman who taught me how to cook from the heart.❤️
But somewhere between testing flours and tasting sauces, I got sick.
Turns out, I had developed a gluten allergy.
So I did what any pasta-obsessed chef would do—
I hit the road across Italy, tasting every gluten-free pasta I could find. 🇮🇹
Spoiler alert: it wasn’t good.
Mushy. Bland. Always missing that something.
But there was this one week, last July…I found myself at a pasta maker in northern Italy.
Twirling strands of my own future flour blend.
Tasting the first real bite.
Dancing (literally) at the table.
Because maybe—just maybe—
This is the pasta I was meant to make all along.
